Directly sourced from a 3rd generation family farm located in the lush hillsides Wazuka, Kyota, Japan. The clay-rich soil is optimal for cultivating green tea leaves that ultimately become our ceremonial grade matcha.
The Okumidori Cultivar is a remarkable blend of Yabukita and Shizuoka Zairai tea plants. This well-balanced cultivar delivers a delightful combination of umami, a touch of astringency, and a refreshing, elegant aroma.
Tea leaves are plucked once a year in May during peak harvest season. After leaves are picked, they undergo a rigorous process of steaming, drying, sifting, and cutting to prevent oxidation.
The leaves are stone-ground into a fine powder, sealed in airtight bags, and placed inside Dona tea tins. We air-freight our matcha direct from Japan, shortening shipping times from 3-4 months to several weeks. To maintain freshness, store matcha in the refrigerator.
Directions: Scoop 2 grams (1 tsp) of matcha into a tea bowl, add 2.5 ounces of hot water (170F), and vigorously whisk until frothy.
